Basic Brazilian Tomato Sauce Recipe - Cooking Index
4 tablespoons | 60ml | Vegetable oil |
3 | Garlic cloves - crushed | |

1 | Fresh tomatoes - (1 quart ) | |
1 | Canned tomato sauce | |
1 | Sliced green peppers | |
6 | Bay leaves | |
2 tablespoons | 30ml | Salt |
1 tablespoon | 15ml | Tabasco brand Pepper Sauce |
1 tablespoon | 15ml | Dried oregano |
1 teaspoon | 5ml | Spanish paprika |
1 teaspoon | 5ml | Cumin seed |
1 teaspoon | 5ml | Curry powder |
1 | Dry white wine | |
1 | Beer |
Mix oil and crushed garlic. In large rondo, heat oil-garlic mixture with butter; saute onion lightly.
Add whole fresh tomatoes and tomato sauce, bring to a boil. Mix in green pepper slices, bay leaves, salt, Tabasco brand Pepper Sauce, oregano, paprika, cumin seed and curry powder. Return to a boil.
Add wine and beer. Reduce heat, simmer about 20 minutes. (Tomatoes should stay whole.)
Grind or puree half of sauce and strain through a china cap. Reserve remaining half of sauce.
This recipe yields 1 gallon.
