Tuna Cracked Wheat Salad Recipe - Cooking Index

1 | Wheat pilaf mix - (8 oz) | |
1/4 cup | 59ml | Lemon juice |
1/4 cup | 59ml | Vegetable oil |
1 | Solid white albacore tuna in water - (12 oz) | |
1 | Cucumber - pared, seeded, | |
And diced | ||
1/2 cup | 55g / 1.9oz | Diced carrot |
1/3 cup | 78ml | Sliced scallions |
1/4 lb | 113g / 4oz | Mushrooms - sliced |
1 | Tomato - chopped | |
1/2 cup | 118ml | Sliced pitted ripe olives |
1/2 cup | 73g / 2.6oz | Chopped parsley |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Tabasco brand pepper sauce |
Salad greens | ||
Yogurt Dressing | ||
2 | Containers plain yogurt - (8 oz ea) | |
4 teaspoons | 20ml | Chopped fresh mint |
= (or 1/4 tspn dried dill weed) | ||
1/4 teaspoon | 1.3ml | Tabasco brand pepper sauce |
Bring water to boil in medium saucepot. Add pilaf mix; reduce heat to low, cover and simmer 15 minutes. Remove from heat; stir in lemon juice and oil. Let stand at room temperature until cool.
Stir in remaining ingredients except salad greens. Cover and chill several hours. Turn into bowl lined with salad greens. Serve with Yogurt Dressing.
Yogurt Dressing: Mix yogurt, mint and Tabasco sauce in small bowl; chill.
