Spicy Spinach Salad Recipe - Cooking Index

1/4 lb | 113g / 4oz | Mushrooms - sliced |
1 tablespoon | 15ml | Flour |
1/2 teaspoon | 2.5ml | Dry mustard |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Tabasco brand Pepper Sauce |
3/4 cup | 177ml | Water |
1/4 cup | 59ml | Red wine vinegar |
8 cups | 320g / 11oz | Fresh spinach leaves |
Cook bacon in large skillet until lightly browned; remove and crumble. Pour off all but 1 tablespoon bacon fat.
Add onion; cook until tender, about 5 minutes. Add mushrooms; cook 5 minutes. Blend in flour, dry mustard, salt and Tabasco sauce. Stir in water and vinegar.
Cook, stirring constantly, until mixture thickens and comes to a boil.
Add spinach; mix well. Transfer to serving bowl. Sprinkle with crumbled cooked bacon.
This recipe yields 4 servings.
