Roasted Tomato And Sundried Tomato Salsa Recipe - Cooking Index
| 6 | Roma tomatoes - oven-roasted | |
| 2 tablespoons | 30ml | Olive oil |
| 1 1/2 teaspoons | 7.5ml | Roasted garlic |
| 3/8 cup | 88ml | Cucumber - peeled, seeded, |
| Finely diced | ||
| 1/4 cup | 59ml | Oil-packed sun-dried tomatoes |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | ||
| 1/4 cup | 59ml | Tabasco brand Pepper Sauce |
To roast tomatoes, roast in oven with olive oil, salt and pepper at 500 degrees for 40 minutes or until done. Place tomatoes and roasted garlic in a food processor and puree until fine.
Combine all ingredients and season with salt and pepper to taste. Keep refrigerated until ready to serve.
