Roasted Tomato And Sundried Tomato Salsa

Recipe Ingredients

6   Roma tomatoes - oven-roasted
2 tablespoons 30mlOlive oil
1 1/2 teaspoons 7.5mlRoasted garlic
3/8 cup 88mlCucumber - peeled, seeded,
  Finely diced
1/4 cup 59mlOil-packed sun-dried tomatoes
  Salt - to taste
  Freshly-ground black pepper - to taste
1/4 cup 59mlTabasco brand Pepper Sauce

Recipe Instructions

To roast tomatoes, roast in oven with olive oil, salt and pepper at 500 degrees for 40 minutes or until done. Place tomatoes and roasted garlic in a food processor and puree until fine.

Combine all ingredients and season with salt and pepper to taste. Keep refrigerated until ready to serve.
