Roasted Red Pepper Coulis Recipe - Cooking Index
2 | Red bell peppers - cored, halved (large) | |
2 teaspoons | 10ml | White wine vinegar |
1/2 teaspoon | 2.5ml | Tabasco brand Pepper Sauce |
1/4 teaspoon | 1.3ml | Salt |
1 tablespoon | 15ml | Olive oil |
Preheat broiler. Place peppers (green or yellow peppers may be substituted) in broiling pan. Broil about 5 minutes on each side or until peppers are lightly charred. Remove peppers to brown paper bag. Close bag so that peppers can steam 10 minutes. Remove skin from peppers.
Blend peppers, vinegar, Tabasco Sauce and salt in food processor or blender. Gradually add oil until mixture is smooth.
Serve with roasted poultry or grilled fish.
This recipe yields 1/2 cup sauce.
