Cherry tomatoes - (small) | ||

1 | Container tomato juice - (42 oz) - chilled | |
1 1/2 cups | 355ml | Vodka |
2 tablespoons | 30ml | Horseradish |
2 tablespoons | 30ml | Lemon juice |
2 tablespoons | 30ml | Tabasco garlic pepper sauce |
1 | Seltzer - chilled |
Fill 6-cup ring mold with water to come halfway up side. Freeze approximately 2 hours.
Arrange small cherry tomatoes and mint sprigs in small clusters on ice in ring mold; carefully add enough water to fill. Freeze until firm.
Combine tomato juice, vodka, horseradish, lemon juice and Tabasco Sauce in large punch bowl. Just before serving, add seltzer and unmolded ice ring.
This recipe yields 8 servings.
