3/4 cup | 177ml | Olive oil - extra virgin |
1/2 | Unsalted butter | |
8 | Garlic cloves - finely chopped (medium) | |
2 | Shallot - finely chopped (medium) | |
36 | Shrimp - about 3/4 pound, (medium) shelled and deveined | |
1/3 cup | 78ml | Lemon juice |
1/4 cup | 36g / 1.3oz | Basil - fresh, finely chopped |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Black pepper - ground |
1/2 cup | 31g / 1.1oz | Flour |
1/4 teaspoon | 1.3ml | Oregano - ground |
1/4 teaspoon | 1.3ml | Red cayenne pepper - ground |
4 tablespoons | 60ml | Brandy - optional |
Season the flour with the salt, black pepper and cayenne pepper. Dredge shrimp in flour. In a large skillet, heat the olive oil and the butter over moderate-to-high heat. Add the garlic, and shallot; sauteefor about 30 seconds.
Add the shrimp and sauteefor 2 to 3 minutes, until the shrimp turn pink and are cooked through. Add basil and remaining ingredients.
Serve immediately over spaghetti or linguini.
