Shrimp Scampi - Bill's

Recipe Ingredients

3/4 cup 177mlOlive oil - extra virgin
1/2   Unsalted butter
8   Garlic cloves - finely chopped (medium)
2   Shallot - finely chopped (medium)
36   Shrimp - about 3/4 pound, (medium) shelled and deveined
1/3 cup 78mlLemon juice
1/4 cup 36g / 1.3ozBasil - fresh, finely chopped
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlBlack pepper - ground
1/2 cup 31g / 1.1ozFlour
1/4 teaspoon 1.3mlOregano - ground
1/4 teaspoon 1.3mlRed cayenne pepper - ground
4 tablespoons 60mlBrandy - optional

Recipe Instructions

Season the flour with the salt, black pepper and cayenne pepper. Dredge shrimp in flour. In a large skillet, heat the olive oil and the butter over moderate-to-high heat. Add the garlic, and shallot; sauteefor about 30 seconds.

Add the shrimp and sauteefor 2 to 3 minutes, until the shrimp turn pink and are cooked through. Add basil and remaining ingredients.

Serve immediately over spaghetti or linguini.
