Grilled Spam Ensalada Recipe - Cooking Index
1 | Spam luncheon meat - (12 oz) - cut into 1/2" strips | |
1 | Onion - cut into wedges | |
3 | Jalapeño peppers - chopped | |
2 cups | 474ml | Sliced jicama |
2 cups | 474ml | Peeled - sliced tart apples |
2 cups | 474ml | Sliced zucchini |
1/2 cup | 118ml | Oil |
2 tablespoons | 30ml | Chi-Chi's hot salsa |
1 tablespoon | 15ml | Vinegar |
1/2 teaspoon | 2.5ml | Coarsely-ground black pepper |
In skillet over medium-high heat, cook Spam, onion, and jalapeño peppers 7 to 10 minutes or until browned.
In bowl, combine jicama, apple and zucchini. In small bowl, whisk together oil, salsa, vinegar, and pepper. Pour dressing over jicama mixture; toss to combine.
To serve, place vegetable mixture around warm Spam mixture.
This recipe yields 4 servings.
