1/2 cup | 55g / 1.9oz | Chopped celery |
1/3 cup | 20g / 0.7oz | Chopped onion |
1/4 cup | 36g / 1.3oz | Chopped green pepper |
1 tablespoon | 15ml | Milk |
1/2 teaspoon | 2.5ml | Salt |
Freshly-ground black pepper - to taste | ||
1 | Spam luncheon meat - (12 oz) - diced, divided | |
1 cup | 62g / 2.2oz | Halved cherry tomatoes |

Cook potatoes in boiling salted water until tender; drain. Cool slightly, peel. When cooled to room temperature, slice thin.
In medium bowl, combine mayonnaise, sour cream, celery, onion, green pepper, milk, salt, and pepper; gently stir in potatoes.
In 2-quart serving dish, spread one quarter of the potato salad over bottom; sprinkle with half of Spam. Add another one quarter of the potato salad, then cherry tomatoes. Finish with 2 more layers of potato salad separated by remaining Spam. Cover and refrigerate at least 2 hours to blend flavors.
Before serving, garnish with green pepper rings and chopped radishes.
