Avocado Mousse Salad Recipe - Cooking Index
2 cups | 474ml | Ripe avocados - (abt 3/4 lb ea) (large) |
1 | Spam luncheon meat - (7 oz) - cut in chunks | |
Juice of 1 lemon | ||
1/2 cup | 118ml | Dairy sour cream |
1/4 teaspoon | 1.3ml | Salt |
Few drops hot pepper sauce | ||
1 | Unflavored gelatin | |
1/4 cup | 59ml | Cold water |
Lettuce leaves | ||
Pitted black olives |
Halve, pit, and peel avocados; cut into chunks. Combine avocado, Spam, lemon juice, sour cream, salt, and pepper sauce in food processor or blender and process until smooth.
Soften gelatin in cold water; dissolve over boiling water. Stir in avocado mixture. Divide into eight 1/2-cup molds. Refrigerate at least 2 hours. To serve unmold onto lettuce-lined salad plates; garnish with black olives, if desired.
Nice to know: You can make this salad in individual molds or in one 4-cup mold.
