| 1/2 cup | 55g / 1.9oz | Chopped carrots |
| 1/2 cup | 73g / 2.6oz | Chopped pecans |
| 1 cup | 146g / 5.1oz | Yellow pepper - chopped (medium) |
| 1/2 cup | 80g / 2.8oz | Raisins |
| Lettuce cups - (optional) | ||
| Sherry Chive Vinaigrette | ||
| 1/3 cup | 78ml | Oil |
| 2 tablespoons | 30ml | Sherry |
| 1 | Garlic clove - peeled | |
| 1 tablespoon | 15ml | Chopped parsely |
| 1/3 cup | 78ml | Snipped chives |
| 1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
Combine the Spam, cooked rice, carrots, pecans, yellow pepper, and raisins. Cover and refrigerate the mixture for four hours or overnight. Serve in lettuce cups if desired.
For the vinaigrette: Combine all ingredients in a food processor and blend until very well minced.
