Spam Cheesecake

Alberta Dunbar recieved a $2500 shopping spree at the Mall Of America in Minnesota for this savory appetizer which features chutney, brandy, pine nuts and feta cheese.

Recipe Ingredients

  For The Crust
3/4 cup 109g / 3.8ozSeasoned bread crumbs
1/4 cup 23g / 0.8ozGround toasted almonds or pine nuts
1/4 teaspoon 1.3mlGround nutmeg
1/4 cup 49g / 1.7ozMelted butter
  For The Filling
2   Vegetable flavor cream cheese - (8 oz ea)
3   Eggs
1/2 cup 31g / 1.1ozTomato-basil flavored feta cheese - crumbled
1/2 cup 73g / 2.6ozCrumbled blue cheese
1/4 cup 36g / 1.3ozChopped black olives
1 tablespoon 15mlAll-purpose flour
1 teaspoon 5mlItalian seasoning
1 tablespoon 15mlBrandy
  (or 1/2 tspn brandy extract)
1   Spam luncheon meat - (12 oz) - grated
  For The Topping
1 cup 237mlSour cream
2 teaspoons 10mlSugar
1   Major Grey chutney - (10 oz) - pureed
1/3 cup 30g / 1.1ozToasted slivered almonds or pine nuts
  Assorted crackers

Recipe Instructions

Preheat oven to 350 degrees.

For the crust, in a small bowl, combine all crust ingredients. Gently press into bottom of a 10-inch springform pan or pie plate. Bake 8 to 10 minutes. Remove from oven. Set aside to cool. Reduce oven temperature to 300 degrees.

In a large bowl, beat cream cheese until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in next six filling ingredients. Gently fold in Spam. Pour into the prepared crust and bake 50 to 60 minutes or until center is almost set.

Meanwhile, in a small bowl, combine sour cream and sugar. Spread over the cheesecake and bake another 10 minutes. Remove cheesecake from oven. Cool to room temperature. Refrigerate several hours or overnight.

Before serving, spread pureed chutney over the cheesecake and sprinkle with toasted nuts around the outside edge. Cut into thin wedges and serve with assorted crackers.
