2 lbs | 908g / 32oz | Celery ribs with tops - cut in thirds (large) |
1 lb | 454g / 16oz | Carrot - scraped, halved (large) |
1 lb | 454g / 16oz | Onion - coarsely chopped (medium) |
1 teaspoon | 5ml | Minced garlic |
1 teaspoon | 5ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |

1 tablespoon | 15ml | White vinegar |
In large pot, combine lentils, celery, carrot, onion, garlic, salt, pepper, and water; bring to a boil. Cover and simmer 45 minutes. Remove from heat; cool slightly.
Place half of lentils and all celery and carrot in food processor or blender; process until pureed. Return to pot. Add Spam to soup. Bring to a boil; cover and simmer 15 minutes. Stir in vinegar. Mix well before ladling into soup bowls.
