3 cups | 438g / 15oz | Chopped cabbage - (abt 3/4 lb) |
2 cups | 292g / 10oz | Potatoes - peeled, diced (medium) |
2 cups | 125g / 4.4oz | Tomatoes - peeled, chopped (medium) |
1 cup | 146g / 5.1oz | Zucchini - diced (medium) |
1 cup | 146g / 5.1oz | White turnip - diced (small) |
1/2 teaspoon | 2.5ml | Salt |
1 | Pinto beans - (16 oz) - undrained | |
1/4 cup | 40g / 1.4oz | Long-grain rice |
Parmesan cheese |
In large pot, saute Spam, onion, celery, carrot, and garlic in oil until lightly browned, stirring often. Add water, basil, and bay leaf; bring to a boil. Cover and simmer 10 minutes.
Add cabbage, potatoes, tomatoes, zucchini, turnip, and salt. Cover and gently boil 15 minutes. Add pinto beans and rice; cover and cook 15 minutes longer.
Serve in large soup bowls with a sprinkling of grated Parmesan cheese, if desired.
