2 cups | 320g / 11oz | Dried pinto beans - soaked overnight |
1 | Spam luncheon meat - (12 oz) - cut 1/2" cubes | |
1 | Water | |
2 | Tomato juice - (13 oz ea) | |
2 | Chicken stock - (14 1/2 oz) | |
1 | Onion - chopped (medium) | |
3 | Garlic cloves - minced | |
1/4 cup | 40g / 1.4oz | Brown sugar - (firmly packed) |
2 tablespoons | 30ml | Chili powder |
3 | Bay leaves | |
1 teaspoon | 5ml | Oregano |
1 teaspoon | 5ml | Cumin |
1 teaspoon | 5ml | Thyme |
In 4-quart saucepan add all ingredients; stir to blend. Cook over medium heat until mixture comes to a boil. Boil for 10 minutes. Reduce heat to low; continue cooking, stirring occasionally, until soup is thickened (3 to 4 hours). Remove bay leaves.
This recipe yields 6 servings.
