Skillet Chili Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
1 tablespoon | 15ml | Chopped onion (medium) |
2 teaspoons | 10ml | Chili powder |
1 teaspoon | 5ml | Cumin |
2 | Diced tomatoes and green chiles - (10 oz ea) | |
1 | Zucchini squash - diced (large) | |
2 | Black beans - (16 oz ea) - rinsed and drained | |
2 cups | 320g / 11oz | Cooked rice |
Heat oil in a large nonstick skillet. Cook onion 5 minutes or until softened. Stir in chili powder and cumin and cook 1 minute. Add tomatoes and chiles, bringing it bring to a boil. Add zucchini and cook 3 minutes or until tender. Add beans and rice and cook 5 minutes or until heated through.
This recipe yields 4 servings.
