1 | Kidney beans - (16 oz) | |
1 1/2 cups | 93g / 3.3oz | Canned tomatoes |
2 cups | 474ml | Water |
1 cup | 62g / 2.2oz | Onion - chopped (medium) |
1 | Bay leaf | |
3/4 teaspoon | 3.8ml | Salt |
1/4 teaspoon | 1.3ml | Garlic salt |
1/4 teaspoon | 1.3ml | Thyme |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
1/2 cup | 73g / 2.6oz | Diced potatoes |
1/4 cup | 36g / 1.3oz | Chopped green pepper |
Cook sausage in skillet and brown. Pour off fat. In a large kettle, combine beans, tomatoes, water, onion, bay leaf, salt, garlic salt, thyme and pepper. Add sausage. Simmer, covered for 1 hour.
Add potatoes and green peppers. Cook covered for 15 minutes or until potatoes are tender. Remove bay leaf and serve.
