Civilian Cornbread Recipe - Cooking Index
1 1/2 cups | 93g / 3.3oz | Flour |
2 tablespoons | 30ml | Baking powder |
1 teaspoon | 5ml | Salt |
1/4 cup | 49g / 1.7oz | Sugar |
1 1/2 cups | 93g / 3.3oz | Yellow cornmeal |
1/3 cup | 48g / 1.7oz | Grated Romano cheese |
1/4 cup | 36g / 1.3oz | Chopped green pepper |
1/4 cup | 15g / 0.5oz | Sliced green onions |
6 tablespoons | 90ml | Melted butter or canola oil |
4 teaspoons | 20ml | Chili powder |
1 1/3 cups | 315ml | Milk |
2 | Eggs - slightly beaten |
Sift together flour, baking powder, salt and sugar. Stir in cornmeal, cheese, green pepper and onion.
Plunk the butter or oil in small bowl and stir in the chili powder, milk and eggs. Mix, then plop this mess into the dry ingredients and stir just until all the flour is moistened.
Pour batter into a greased, 9-inch-square cake pan. Bake in a 400 degree oven for about 35 minutes, or until a toothpick comes out clean after you poke the bread in the middle. We are assuming that the toothpick was clean when you stuck it in. Cut in squares and serve warm.
