| 3 tablespoons | 45ml | Olive oil - (to 4 tbspns) |
| 2 | Garlic cloves - minced | |
| 1 | Yellow onion - chopped (large) | |
| 1 lb | 454g / 16oz | Lean beef - cut small cubes |
| 1 lb | 454g / 16oz | Lean pork - cut small cubes |
| 1/4 cup | 15g / 0.5oz | All-purpose flour |
| 1 1/2 cups | 355ml | Beef stock or broth |
| 6 cups | 1422ml | Water |
| 6 | Green chiles - roasted, peeled, | |
| Seeded, and chopped | ||
| 4 | Potatoes - diced (large) | |
| 1 teaspoon | 5ml | Freshly-ground black pepper |
| 1/2 teaspoon | 2.5ml | Oregano |
| 1 tablespoon | 15ml | Finely-chopped fresh parsley |
| 1 teaspoon | 5ml | Salt |
Heat the oil in a large pot and saute the garlic and onions for 4 to 5 minutes. Dredge the beef and the pork in the flour and brown in the pan (add more oil, if necessary). Add the beef stock or broth and water and cook for 1 hour.
Add the rest of the ingredients and cook over low heat for appoximately 1 hour or until meat and potatoes are done.
