Stefado - (Beef And Onion Stew)

Recipe Ingredients

2 lbs 908g / 32ozLean beef
2 tablespoons 30mlOlive oil - (to 3 tbspns)
2   Garlic cloves - crushed
2   Bay leaves
1 tablespoon 15mlWine vinegar
4 oz 113gGood-quality red wine
  Salt - to taste
  Freshly-ground black pepper - to taste
  Water - as needed
2   Boiled small white onions - (12 oz ea)
  Hot cooked rice

Recipe Instructions

Saute the beef in olive oil. Add garlic, bay leaves, wine vinegar, wine and salt and pepper. Add enough water to cover. Cover and simmer for 1 1/2 to 2 hours, add more water, if necessary. When stew is ready to serve, add the onions and heat thoroughly. Serve over rice.

This recipe yields 4 to 6 servings.
