Vegetable-oil cooking spray | ||
1 cup | 62g / 2.2oz | Chopped onion |
6 cups | 1422ml | Fresh corn kernels (12 ears) - with milk from cob |
(or 6 cups frozen corn) | ||
3 cups | 711ml | Defatted chicken broth |
1/2 cup | 73g / 2.6oz | Chopped red bell pepper |
1/2 teaspoon | 2.5ml | Chopped fresh rosemary |
1/2 teaspoon | 2.5ml | Dried thyme |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
Cayenne - to taste |
Preheat a large, heavy saucepan over medium heat for about one minute. Spray it twice with the oil. Saute onion for five minutes or until translucent. Add four cups corn and saute for four to five minutes, until it softens a bit. Add two cups broth and cook 20 minutes or until
Return puree to saucepan over medium-low heat. Add bell pepper, rosemary, thyme, pepper, cayenne and the remaining 1 cup broth and 2 cups corn. Stir and simmer ten minutes more, until thick and creamy. Garnish with basil.
