Jack Daniels Crab And Corn Chowder

4 1/2 tablespoons 67mlFlour
1/2 cup 55g / 1.9ozChopped celery
1/2 cup 31g / 1.1ozChopped onion
3 tablespoons 45mlButter
1 cup 146g / 5.1ozDiced red potatoes
2/3 cup 41g / 1.4ozFresh corn
1/2 tablespoon 7.5mlCrab base
  (or 1 chicken boullion cube)
1 1/2 cups 355mlWater
1 cup 237mlCream
3/4 cup 46g / 1.6ozDungeness crab meat
1   Thyme
1   Salt
1   Freshly-ground black pepper
1/2 teaspoon 2.5mlOld Bay seasoning
1 tablespoon 15mlMinced fresh parsley
2 tablespoons 30mlJack Daniels whiskey

Recipe Instructions

Precook potatoes, drain, cut and set aside. Sweat onions, celery and corn with butter, add flour and thyme and cook 5 to 10 minutes. Add water and crab base, Old Bay seasoning, parsley and 1/2 cup of the crab meat. Add heavy cream and bring to 180 degrees.

Add potatoes and salt and pepper to taste. Add Jack Daniels and remainder of crab meat just before serving.

This recipe yields 4 servings.
