1/2 cup | 55g / 1.9oz | Chopped celery |
1/2 cup | 31g / 1.1oz | Chopped onion |
3 tablespoons | 45ml | Butter |
1 cup | 146g / 5.1oz | Diced red potatoes |
2/3 cup | 41g / 1.4oz | Fresh corn |
1/2 tablespoon | 7.5ml | Crab base |
(or 1 chicken boullion cube) | ||
1 1/2 cups | 355ml | Water |
1 cup | 237ml | Cream |
3/4 cup | 46g / 1.6oz | Dungeness crab meat |

1 | Freshly-ground black pepper | |
1/2 teaspoon | 2.5ml | Old Bay seasoning |
1 tablespoon | 15ml | Minced fresh parsley |
2 tablespoons | 30ml | Jack Daniels whiskey |
Precook potatoes, drain, cut and set aside. Sweat onions, celery and corn with butter, add flour and thyme and cook 5 to 10 minutes. Add water and crab base, Old Bay seasoning, parsley and 1/2 cup of the crab meat. Add heavy cream and bring to 180 degrees.
Add potatoes and salt and pepper to taste. Add Jack Daniels and remainder of crab meat just before serving.
This recipe yields 4 servings.
