Frankfurter And Corn Chowder

Recipe Ingredients

1   Onion - chopped (medium)
1 cup 110g / 3.9ozChopped celery
1/4 cup 49g / 1.7ozButter or margarine
1 cup 146g / 5.1ozDiced peeled potatoes
2 cups 474mlWater
1 teaspoon 5mlSalt
1 lb 454g / 16ozFrankfurters - sliced
1/2   Bay leaf - crumbled
1 teaspoon 5mlDried thyme
3 cups 187g / 6.6ozCut fresh corn
3 tablespoons 45mlAll-purpose flour
1/2 cup 118mlCold milk
1 1/2 cups 355mlHot milk
1/2 cup 118mlCooked peas

Recipe Instructions

Saute onion and celery in butter. Add potato, water, salt, frankfurters, bay leaf, and thyme. Cover and simmer until potatoes are almost tender.

Add corn and simmer for 5 minutes longer. Blend flour and cold milk into a smooth paste. Add a little of the vegetable mixture to this and stir slowly into vegetable-frankfurter mixture. Simmer for 5 minutes. Add hot milk and blend. Garnish with peas.

This recipe yields 1 1/2 quarts or 5 servings.
