No Cook Crab Bisque

Recipe Ingredients

1 cup 237mlSkim milk
1   Sliced white potatoes - (15 oz) - drained
1   Clam juice - (8 oz)
1/2   Mexicorn - (11 oz can)
6 1/2 oz 184gClaw crab meat - drained, rinsed
9   Green onions - chopped
  Salt - to taste
  Freshly-ground white pepper - to taste
1/4 cup 59mlLight cream - (optional)

Recipe Instructions

In a blender, combine the skim milk, potatoes and clam juice. Puree until thick and creamy. Transfer to a bowl. Add the corn, crab, onions, salt, pepper and cream, if using. Stir to combine.

This recipe yields 5 servings.
