2 cups | 474ml | Dandelion greens |
1/4 cup | 27g / 1oz | Sliced carrot |
1 tablespoon | 15ml | Ginger root |
6 tablespoons | 90ml | Mushrooms - sliced (large) |
1 | Fresh sugar snap peas | |
2/3 cup | 97g / 3.4oz | Diced tofu |
1 | Onion - chopped |
Bring broth to a simmer; add chopped dandelion greens, carrot, ginger root. Simmer until carrots are tender; about 8 to 10 minutes.
Add mushrooms and peas. Continue cooking until peas are slightly tender but still crisp. Stir in tofu and onions. Season with salt. Serve with your favorite crackers.
