Chow Down Chowder

Recipe Ingredients

14 1/2 oz 411gChicken broth
1 cup 146g / 5.1ozFrozen cut broccoli
1 cup 237mlSliced fresh mushrooms
1/2 cup 31g / 1.1ozChopped onion
1 tablespoon 15mlMargarine
2 tablespoons 30mlAll-purpose flour
13 1/2 oz 383gEvaporated skim milk
8 oz 227gWhole kernal corn - drained
1 tablespoon 15mlChopped pimiento
1/4 teaspoon 1.3mlSalt
1/8 teaspoon 0.6mlFreshly-ground balck pepper

Recipe Instructions

In a samll saucepan bring broth and broccoli to boil. Reduce heat; cover and simmer for 5 minutes. Do not drain. Set aside.

In a large saucepan cook mushrooms and onions in margarine until tender. Stir in flour, salt, and pepper. Add milk all at once. Cook and stir until bubbly. Cook and stir 1 minute more.

Stir in broccoli with broth, corn, and pimiento; heat through.

This recipe yields 6 servings.
