14 1/2 oz | 411g | Chicken broth |
1 cup | 146g / 5.1oz | Frozen cut broccoli |
1 cup | 237ml | Sliced fresh mushrooms |
1/2 cup | 31g / 1.1oz | Chopped onion |
1 tablespoon | 15ml | Margarine |
2 tablespoons | 30ml | All-purpose flour |
13 1/2 oz | 383g | Evaporated skim milk |
8 oz | 227g | Whole kernal corn - drained |
1 tablespoon | 15ml | Chopped pimiento |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground balck pepper |
In a samll saucepan bring broth and broccoli to boil. Reduce heat; cover and simmer for 5 minutes. Do not drain. Set aside.
In a large saucepan cook mushrooms and onions in margarine until tender. Stir in flour, salt, and pepper. Add milk all at once. Cook and stir until bubbly. Cook and stir 1 minute more.
Stir in broccoli with broth, corn, and pimiento; heat through.
This recipe yields 6 servings.
