Broccoli Chowder Recipe - Cooking Index
You can used chopped broccoli or 1 large fresh bunch. It is also good using Swiss Cheese.
Courses: Soup3 | Frozen broccoli - (10 oz ea) | |
3 | Chicken broth | |
3 cups | 711ml | Milk |
1 cup | 146g / 5.1oz | Finely-chopped cooked ham |
2 teaspoons | 10ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1 cup | 237ml | Light cream or half-and-half |
1/2 lb | 227g / 8oz | Cheddar cheese - grated |
1/4 cup | 49g / 1.7oz | Butter or margarine |
Cook broccoli in one can of broth, covered until tender. Remove broccoli and chop fine. Add remaining broth, milk, ham, salt and pepper. Bring to a boil. Stir in remaining ingredients and broccoli. Heat and serve.
This recipe yields 6 servings.
