Best Tomato Bisque

Recipe Ingredients

1/3 cup 65g / 2.3ozButter
1/2 cup 31g / 1.1ozOnion - minced fine (medium)
1/3 cup 20g / 0.7ozFlour
1   Whole milk
2 1/4 cups 533mlTomato juice
1/2 teaspoon 2.5mlSalt
1 teaspoon 5mlSugar
1/2 teaspoon 2.5mlCelery salt
1/8 teaspoon 0.6mlFreshly-ground white pepper
1/2 teaspoon 2.5mlWorcestershire sauce
1/2 teaspoon 2.5mlTabasco sauce
1   Diced tomatoes - (16 oz) - drained
1   Crushed tomatoes with puree - (28 oz) - Progresso preferred

Recipe Instructions

Melt butter and saute onion until tender. Stir in flour and heat to a bubble, stirring constantly. Remove from heat and slowly whisk in milk. Whisk quickly, but pour milk slowly.

Return to medium-high heat and bring just to a boil. Add remaining ingredients and bring to a simmer. Simmer gently stirring frequently for about 25 minutes. Ladle into bowls and serve.

This recipe yields 6 servings.
