1/2 cup | 31g / 1.1oz | Onion - minced fine (medium) |
1/3 cup | 20g / 0.7oz | Flour |
1 | Whole milk | |
2 1/4 cups | 533ml | Tomato juice |
1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Sugar |
1/2 teaspoon | 2.5ml | Celery salt |
1/8 teaspoon | 0.6ml | Freshly-ground white pepper |
1/2 teaspoon | 2.5ml | Worcestershire sauce |
1/2 teaspoon | 2.5ml | Tabasco sauce |
1 | Diced tomatoes - (16 oz) - drained | |
1 | Crushed tomatoes with puree - (28 oz) - Progresso preferred |
Melt butter and saute onion until tender. Stir in flour and heat to a bubble, stirring constantly. Remove from heat and slowly whisk in milk. Whisk quickly, but pour milk slowly.
Return to medium-high heat and bring just to a boil. Add remaining ingredients and bring to a simmer. Simmer gently stirring frequently for about 25 minutes. Ladle into bowls and serve.
