Sopa Seca De Fideo (Dry Soup) Recipe - Cooking Index
Mexican meals are often served with a sopa seca or dry soup. It is soup in name only, because the broth is almost entirely cooked away. It can be made with pasta, rice or even pieces of tortilla which have been cooked briefly in hot oil or butter, then added to the liquid. If meats and/or vegetables are added, a sopa seca can become a delicious main course.

3 tablespoons | 45ml | Butter |
1 tablespoon | 15ml | Onion - chopped (small) |
1/2 | Green pepper - seeded, chopped | |
1 | Garlic clove - minced | |
1/2 teaspoon | 2.5ml | Cumin |
2 cups | 125g / 4.4oz | Beef bouillon |
1 | Tomato - seeded, chopped | |
Parmesan cheese | ||
Sour cream |
Brown the vermicelli (broken into short lengths) in butter over medium heat, stirring constantly -- careful, it browns fast. Remove pasta, add onion, green pepper, and garlic. Cook until onion is soft. Add vermicelli, cumin, and beef bouillon. Cover and cook over low heat until liquid is absorbed. Stir in tomato.
Serve topped with sour cream and Parmesan cheese.
