Simple Southwest Beef Stew

Recipe Ingredients

2 lbs 908g / 32ozGround beef
1   Onion - chopped
14 oz 397gCanned tomatoes - diced
15 oz 426gCanned pinto beans - rinsed, drained
17 oz 483gCanned whole corn - drained
4   Potatoes - cubed
1 cup 237mlPicante sauce
2 cups 474mlWater
1 teaspoon 5mlGround cumin
  Salt - to taste
  Freshly-ground black pepper - to taste
1/2 teaspoon 2.5mlGarlic powder
  Shredded cheese - for garnish

Recipe Instructions

Cook ground beef and onion until done; drain well. In a large pan add beef, onion, tomatoes, beans, corn, potatoes, picante sauce, water, cumin, salt and pepper to taste, and garlic powder. Simmer, covered, for 45 minutes.

Alternately, you can use a slow cooker and let it simmer all day. Serve; top with cheese.

This recipe yields 4 servings.
