2 | Navy or Great Northern beans - (15oz ea) | |
2 tablespoons | 30ml | Olive oil |
1 | Celery rib - diced | |
2 | Carrots - chopped (medium) | |
1 | Onion diced (medium) | |
2 | Garlic cloves - chopped finely | |
(or a dash of garlic powder) | ||
1/2 lb | 227g / 8oz | Smoked sausage or kielbasi - diced |
46 oz | 1307g | Freshly-ground black pepper |
10 oz | 284g | Frozen chopped spinach or kale |
1/2 cup | 118ml | Small shell pasta |

Drain beans of surface liquid. Place olive oil in large saucepan. Add celery, carrots, onion, garlic and sausage. Cook over medium heat, stirring occasionally.
Add beans, chicken broth and pepper. Bring to boil, then lower heat; cover and simmer about 35 to 45 minutes or until flavors are blended.
Cook pasta according to package directions; drain. Stir pasta into soup and heat all together until flavors are blended.
This recipe yields about 8 servings.
