Golden Gazpacho Recipe - Cooking Index
Cold, fruity, and bracing--an unusual first course to serve 4 to 6 people.
Courses: Soup1 | Cantaloupe - peeled, seeded, (large) | |
And chopped | ||
3 | Yellow peppers - cored, seeded, | |
And chopped | ||
1 cup | 237ml | Plain yogurt |
1/2 cup | 118ml | Dry white wine |
1/4 cup | 15g / 0.5oz | Sliced onion |
1 tablespoon | 15ml | Chopped cilantro |
1 1/2 tablespoons | 22ml | Lime juice |
Salt - to taste | ||
Cilantro sprigs - for garnish |
Puree the cantaloupe, peppers, yogurt, wine, onion, and chopped cilantro. Stir in the lime juice and season with salt. Refrigerate until well chilled.
When ready to serve, ladle soup into bowls. Top each with a sprig of cilantro.
