Italian Fish Soup With Orzo

Recipe Ingredients

2   Garlic cloves - sliced
1 teaspoon 5mlCumin
1 teaspoon 5mlPaprika
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
1/4 cup 59mlTomato paste
2 tablespoons 30mlOlive oil
1/4 cup 15g / 0.5ozThinly-sliced onions
6 cups 1422mlFish stock
1 lb 454g / 16ozSea bass or red snapper fillets - cut in chunks
1/3 cup 53g / 1.9ozOrzo (rice-shaped pasta)
  Lemon and lime wedges - (thin)
  Minced parsley - to taste

Recipe Instructions

Crush garlic with the cumin, paprika, salt, and pepper in a food processor, then mix in the tomato paste.

Heat oil in a large saucepan over medium heat, add onion, and cook until golden -- about 10 minutes. Add the spice mixture and stir for 3 minutes.

Pour in the fish stock and bring to a boil. Reduce heat to low and add fish. Cook for 10 minutes. Add orzo and cook on low for 10 more minutes.

Taste for seasoning. Ladle into bowls, sprinkle with parsley, and serve with thin wedges of lemon and lime on the side.
