Curried Turkey Soup Recipe - Cooking Index
6 cups | 1422ml | Turkey stock |
1 cup | 146g / 5.1oz | Chopped peeled apples |
1 cup | 62g / 2.2oz | Onion - chopped (large) |
1 | Scallions - chopped | |
2 | Garlic cloves - minced | |
1/2 teaspoon | 2.5ml | Salt |
2 teaspoons | 10ml | Curry powder |
1 cup | 237ml | Buttermilk |
1 cup | 146g / 5.1oz | Diced cooked turkey |
2 cups | 474ml | Cooked orzo or other tiny pasta |
Simmer stock, apples, onion, scallions, garlic, salt and curry for 30 minutes. Puree in blender.
Add buttermilk and turkey to the stock. Heat just to the boiling point, but do not allow to come to a full boil.
Add cooked pasta before serving and let heat up just enough to warm pasta.
