Chilled Cucumber-Cilantro Soup Recipe - Cooking Index

1 1/4 cups | 296ml | Regular-strength chicken broth |
3/4 cup | 12g / 0.4oz | Firmly packed rinsed and drained cilantro |
1/2 cup | 118ml | Nonfat or low-fat milk |
1/4 cup | 59ml | Lemon juice |
Salt - to taste |
Peel cucumber; cut in chunks into a food processor or blender. Whirl with broth, cilantro, milk and lemon juice until smoothly pureed. Season with salt to taste. Cover and chill until cold, at least 2 hours or up to a day.
