Chicken And Barley Soup Recipe - Cooking Index
4 cups | 948ml | Chicken broth |
1 cup | 237ml | Water |
1 cup | 62g / 2.2oz | Chopped onions |
1 cup | 110g / 3.9oz | Chopped carrots |
1/2 cup | 55g / 1.9oz | Chopped celery |
1/3 cup | 78ml | Uncooked barley |
1/2 teaspoon | 2.5ml | Dried thyme leaves |
1/4 teaspoon | 1.3ml | Tumeric or saffron |
2 cups | 125g / 4.4oz | Cubed cooked chicken |
1/4 cup | 36g / 1.3oz | Chopped fresh parsley |
In a large saucepan, combine all ingredients except chicken and parsley. Bring to a boil, reduce heat, and simmer 35 to 40 minutes or until barley is tender.
Add chicken and parsley, cooking until thoroughly heated.
This recipe yields about 2 quarts.
