Apple, Potato And Cheddar Soup Recipe - Cooking Index
2 tablespoons | 30ml | Vegetable oil |
3 tablespoons | 45ml | Granny Smith apples - peeled, chopped (medium) |
1 | Potato - peeled, chopped | |
1 | Celery stalk - chopped | |
1/4 cup | 15g / 0.5oz | Finely-chopped onion |
1/8 teaspoon | 0.6ml | Ground thyme |
1/4 cup | 59ml | White wine |
5 cups | 1185ml | Chicken stock |
4 cups | 584g / 20oz | Grated mild Cheddar cheese |
1/2 cup | 118ml | Heavy cream |
1/8 teaspoon | 0.6ml | Nutmeg |
Salt - to taste | ||
Freshly-ground white pepper - to taste | ||
Buttered croutons | ||
Unpeeled diced apples |
Heat oil in large saucepot; add apples, potato, celery, onion and thyme. Saute 10 minutes. Stir in wine and simmer 2 minutes; add stock and simmer 45 minutes.
Puree soup mixture. Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste. Cook just till heated through do not allow to boil. Garnish with croutons and diced apples.
