A Different Onion Soup

Recipe Ingredients

4 tablespoons 60mlYellow onions - sliced (large)
3 tablespoons 45mlButter or safflower oil
1   Vegetable stock
2 cups 474mlTomato or V-8 juice
1   Garlic clove - minced
1/2 teaspoon 2.5mlDried tarragon
1 pinch  Thyme
2 teaspoons 10mlLemon juice
1 tablespoon 15mlBrandy - more if desired
  Salt - to taste
  Freshly-ground black pepper - to taste
1/2 cup 73g / 2.6ozParmesan or Gruyere cheese - grated
6   French bread - (to 8) - toasted

Recipe Instructions

Saute the onions and garlic in the butter or oil until the onions are very tender. Add the stock and remaining ingredients except the bread and cheese. Cover and simmer for 1 hour.

Place a heaping tablespoonful of cheese in each bowl (or atop a crouton in each bowl) and ladle the soup over it. Serve at once.
