Lobster Bisque

Recipe Ingredients

1 teaspoon 5mlOnion - finely chopped (small)
3 tablespoons 45mlButter or margarine
3 tablespoons 45mlAll-purpose flour
1 tablespoon 15mlSnipped fresh parsley
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlFreshly-ground white pepper
2 cups 474mlMilk
1 cup 237mlChicken broth
1 1/4 cups 182g / 6.4ozChopped fresh or frozen (thawed) lobster - (abt 12 oz)

Recipe Instructions

Cook and stir onion in butter in a 3-quart saucepan over low heat until onion is tender. Stir in flour, parsley, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat.

Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in lobster. Heat to boiling; reduce heat. Cook about 3 minutes, stirring frequently, until lobster is white.

This recipe yields 4 servings (about 1 cup each).
