2 | Undiluted beef broth - (10 1/2 oz ea) | |
1 | Great Northern beans - (15 oz) - undrained | |
1 | Tomato paste - (6 oz) | |
1/4 cup | 36g / 1.3oz | Chopped parsley |
1 teaspoon | 5ml | Dried oregano leaves - crushed |
1 teaspoon | 5ml | Dried basil leaves - crushed |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/2 cup | 118ml | Dry pasta shells or macaroni |
Or vermicelli broken in 1" pieces | ||
1 | Frozen mixed Italian vegetables - (16 oz) | |
1/2 cup | 73g / 2.6oz | Grated Parmesan cheese - (optional) |
In a large saucepan, saute bacon, onion and garlic until onion is translucent. Stir in water, broth, beans and liquid, tomato paste, parsley, oregano, basil, pepper and pasta. Heat to boiling; reduce heat, simmer 15 minutes.
Mix in vegetables; cook additional 10 minutes. Serve with Parmesan cheese, if desired.
This recipe yields 8 servings.
