Sweet Hot Green Gazpacho

This unusual recipe was developed by the Tabasco company to showcase its version of green hot sauce. The thing I like about the recipe is that the heat is balanced by the natural sweetness of the other ingredients, mostly seedless green grapes and bottled white grape juice. Cilantro lends its distinctive touch for a cold soup of great character. Enjoy it with roast turkey sandwiches, or ham, if you like.

Recipe Ingredients

3   Green onions
2   Celery ribs
1   Cucumber - peeled, seeded (medium)
1   Green bell pepper
1 cup 237mlGreen seedless grapes
1/4 cup 4g / 0.1ozCilantro leaves - (loosely packed)
2 tablespoons 30mlLime juice
1 tablespoon 15mlGreen hot sauce - see * Note
1/4 teaspoon 1.3mlSalt - or to taste
1 cup 237mlBottled white grape juice

Recipe Instructions

* Note: Recipe tested with Tabasco brand green pepper sauce; if using another with a different level of Scoville units -- strength of heat -- add it cautiously to taste. Some green hot sauces are fiery.

Trim the green onions, celery ribs, cucumber and green bell pepper; then cut all into large pieces. Place in the bowl of a food processor fitted with the steel blade. Add the grapes, cilantro, lime juice, green hot sauce and salt. Cover and pulse ingredients just to combine, but do not puree.

With machine running, pour white grape juice through the feed tube and pulse machine just to combine ingredients. Pour into a glass bowl or jar and chill thoroughly before serving.

This recipe yields 4 servings.
