Santa Fe Chilled Nectarine Soup Recipe - Cooking Index
| 2 lbs | 908g / 32oz | Fresh nectarines - cut up |
| 1 cup | 237ml | Apple juice |
| 1 cup | 237ml | Cranberry-raspberry cocktail juice |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/2 teaspoon | 2.5ml | Red pepper flakes |
| 1 tablespoon | 15ml | Balsamic vinegar |
| 1/4 cup | 4g / 0.1oz | Fresh cilantro leaves |
Combine nectarines with juices, salt, pepper flakes and vinegar in electric blender. Whirl until smooth and blended. Add cilantro leaves, and whirl in a stop-and-go fashion for a few seconds just to chop.
This recipe yields 5 servings.
