Pretty Peach Soup Recipe - Cooking Index
3 cups | 711ml | Fresh or frozen peaches - thawed if frozen |
1 cup | 237ml | Fresh or frozen raspberries - thawed if frozen |
3 tablespoons | 45ml | Lemon juice |
1 cup | 237ml | Peach nectar |
1 cup | 237ml | Plain yogurt - (8 oz) |
1/4 cup | 49g / 1.7oz | Sugar - (optional) |
1 teaspoon | 5ml | Almond extract |
Place raspberries in a blender; cover and process until smooth. Strain and discard seeds. Cover and refrigerate puree.
Place peaches and lemon juice in the blender; cover and process until smooth. Transfer to a bowl; stir in nectar, yogurt, sugar if needed (if fruit is tart) and extract. Cover and refrigerate for two hours.
Garnish by drizzling one tablespoon raspberry puree in a design on top of each serving.
This recipe yields 4 servings.
