4 | Baking potatoes - (2 lbs) (large) | |
8 cups | 1896ml | Chicken broth |
1 lb | 454g / 16oz | Bulk Italian sausage |
1 lb | 454g / 16oz | Spinach - shredded |
1/2 cup | 118ml | Whipping cream or milk |
Peel and halve potatoes. Place in a soup pot with 4 cups of the broth. Cover and simmer until tender. By hand, mash potatoes in the broth with a potato masher. Add remaining broth and spinach and simmer 10 minutes.
Meanwhile, fry sausage in a skillet until brown. Drain and add to soup. Add cream or milk and heat through.
This recipe yields 8 servings.
