Potato And Greens Soup

Recipe Ingredients

4   Baking potatoes - (2 lbs) (large)
8 cups 1896mlChicken broth
1 lb 454g / 16ozBulk Italian sausage
1 lb 454g / 16ozSpinach - shredded
1/2 cup 118mlWhipping cream or milk

Recipe Instructions

Peel and halve potatoes. Place in a soup pot with 4 cups of the broth. Cover and simmer until tender. By hand, mash potatoes in the broth with a potato masher. Add remaining broth and spinach and simmer 10 minutes.

Meanwhile, fry sausage in a skillet until brown. Drain and add to soup. Add cream or milk and heat through.

This recipe yields 8 servings.
