Honeydew And Lime Soup Recipe - Cooking Index
1 | Ripe honeydew melon - cut into chunks (medium) | |
Juice and grated zest of 1 lime | ||
1/4 cup | 49g / 1.7oz | Granulated sugar - or as needed |
1/2 cup | 118ml | Nonfat plain yogurt |
Combine the melon, lime juice, zest and sugar in a food processor or blender, and process until smooth. Taste the mixture and add more sugar, 1 teaspoon at a time, if desired. Add the yogurt, and process just long enough to combine. Transfer to a mixing bowl, cover and refrigerate until thoroughly chilled. Stir well and serve in chilled bowls.
This recipe yields 6 servings.
