Honey Carrot Soup Recipe - Cooking Index
3 1/2 cups | 385g / 13oz | Sliced carrots |
1 cup | 237ml | Chicken broth |
1/2 cup | 31g / 1.1oz | Onion - chopped (medium) |
1/2 cup | 118ml | Milk (2%) |
1/4 cup | 59ml | Honey |
Ground nutmeg - to taste |
In a large saucepan, combine carrots, chicken broth and onion. Cover and simmer over medium heat for about 15 minutes or until carrots are tender. Transfer mixture to blender or food processor; blend until smooth. Return to saucepan. Add milk and honey. Return to a simmer.
Serve hot or chilled, sprinkled with nutmeg.
