Cold Spinach Soup

Recipe Ingredients

9 cups 2133mlFresh spinach
2 cups 474mlMilk (whole or low-fat)
1/2 cup 31g / 1.1ozChopped onion
2 1/2 tablespoons 37mlChopped fresh dill
1 teaspoon 5mlLemon-pepper seasoning
16 oz 454gPlain yogurt
1 cup 62g / 2.2ozCubed cooked chicken
  Toasted slivered almonds

Recipe Instructions

In food processor or blender, combine 3 cups spinach, 1 cup milk, the onion, dill and seasoning. Cover and process until nearly smooth. Pour into a large serving bowl.

In the food processor or blender, combine remaining milk and spinach with the yogurt. Cover and blend until practically smooth. Stir into the mixture in the serving bowl, and then stir in the chicken. Refrigerate until serving time.

Ladle into bowls and garnish with the slivered almonds.

This recipe yields 4 servings.
