Cold Spinach Soup Recipe - Cooking Index
9 cups | 2133ml | Fresh spinach |
2 cups | 474ml | Milk (whole or low-fat) |
1/2 cup | 31g / 1.1oz | Chopped onion |
2 1/2 tablespoons | 37ml | Chopped fresh dill |
1 teaspoon | 5ml | Lemon-pepper seasoning |
16 oz | 454g | Plain yogurt |
1 cup | 62g / 2.2oz | Cubed cooked chicken |
Toasted slivered almonds |
In food processor or blender, combine 3 cups spinach, 1 cup milk, the onion, dill and seasoning. Cover and process until nearly smooth. Pour into a large serving bowl.
In the food processor or blender, combine remaining milk and spinach with the yogurt. Cover and blend until practically smooth. Stir into the mixture in the serving bowl, and then stir in the chicken. Refrigerate until serving time.
Ladle into bowls and garnish with the slivered almonds.
This recipe yields 4 servings.
