Cold Potato Soup With Asparagus

Recipe Ingredients

4 cups 948mlChicken broth
2 cups 474mlFresh asparagus cut in 1/2" lengths - except for tips
2 1/2 cups 365g / 12ozChopped peeled potatoes
1/4 teaspoon 1.3mlGarlic powder
2 teaspoons 10mlOnion powder
1 cup 146g / 5.1ozShredded Jarlsberg cheese

Recipe Instructions

Bring broth to a boil. Add asparagus and boil for 2 minutes. Drain, reserving broth. Chill asparagus and return broth to pot. Bring broth to boiling, add potatoes and cook for 10 minutes or until soft. Add seasonings and cheese.

Whirl soup in batches in food processor or blender until nearly smooth. Chill.

To serve, mix in asparagus and garnish with tips.

This recipe yields 4 to 6 servings.
