Cold Potato Soup With Asparagus Recipe - Cooking Index
4 cups | 948ml | Chicken broth |
2 cups | 474ml | Fresh asparagus cut in 1/2" lengths - except for tips |
2 1/2 cups | 365g / 12oz | Chopped peeled potatoes |
1/4 teaspoon | 1.3ml | Garlic powder |
2 teaspoons | 10ml | Onion powder |
1 cup | 146g / 5.1oz | Shredded Jarlsberg cheese |
Bring broth to a boil. Add asparagus and boil for 2 minutes. Drain, reserving broth. Chill asparagus and return broth to pot. Bring broth to boiling, add potatoes and cook for 10 minutes or until soft. Add seasonings and cheese.
Whirl soup in batches in food processor or blender until nearly smooth. Chill.
To serve, mix in asparagus and garnish with tips.
This recipe yields 4 to 6 servings.
