Chou's Chicken Soup

Recipe Ingredients

1   Chicken - (abt 3 1/2 lbs)
5   Water
1/2 cup 118mlSoy sauce - (to 1/3 cup)
12   Dried shiitake mushrooms - whole
2   Fresh ginger 1/4" thick
1   Napa cabbage head - cut 1 1/2" squares
1   Fish balls - see * Note
  Salt - to taste

Recipe Instructions

* Note: Fish balls resemble gefilte fish -- except they're not as salty. They're made with ground white fish, come in a package of about 15 and cost about $2. You can find them in the frozen foods bin.

Combine chicken, water, soy sauce, shiitakes and ginger in a stock pot. Bring to a boil. Lower heat to medium-low and simmer for 1 1/2 to 2 hours. Add salt to taste. Add cabbage and fish balls and simmer for 15 more minutes. Serve.
