1/2 cup | 118ml | Soy sauce - (to 1/3 cup) |
12 | Dried shiitake mushrooms - whole | |
2 | Fresh ginger 1/4" thick | |
1 | Napa cabbage head - cut 1 1/2" squares | |
1 | Fish balls - see * Note | |
Salt - to taste |
* Note: Fish balls resemble gefilte fish -- except they're not as salty. They're made with ground white fish, come in a package of about 15 and cost about $2. You can find them in the frozen foods bin.
Combine chicken, water, soy sauce, shiitakes and ginger in a stock pot. Bring to a boil. Lower heat to medium-low and simmer for 1 1/2 to 2 hours. Add salt to taste. Add cabbage and fish balls and simmer for 15 more minutes. Serve.
