Chilled Tomato Bisque Recipe - Cooking Index
3 cups | 711ml | Tomato juice |
2 tablespoons | 30ml | Tomato paste |
Scallions - minced | ||
1/8 teaspoon | 0.6ml | Thyme |
1/2 teaspoon | 2.5ml | Curry powder |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 tablespoons | 30ml | Fresh lemon juice |
Grated rind of 1/2 lemon | ||
1 cup | 237ml | Sour cream |
Snipped fresh chives - for garnish |
In a serving bowl combine all of the ingredients except the sour cream and chives. Chill. Just prior to serving, blend in the sour cream.
This recipe yields 4 servings.
